Ingredients

icon-toma 3 tablespoons vegetable oil
icon-toma 1 pound Mexican chorizo, casings removed, chopped  
icon-toma 1/4 cup coarsely chopped white onion
icon-toma 1 pound fideos or vermicelli, angel hair, or spaghettini pasta, broken into smaller pieces
icon-toma 10 garlic cloves, peeled, pressed or finely chopped
icon-toma 1 (28-ounce) can crushed tomatoes
icon-toma 1/2 cup La Costeña Diced Chipotles in Adobo Sauce  
icon-toma 1 teaspoon crumbled dried oregano
icon-toma 1 1/2 teaspoons kosher salt, or more to taste
icon-toma 1 teaspoon coarsely ground black pepper
icon-toma 3 cups chicken or vegetable broth
icon-toma 1/2 cup Mexican crema
icon-toma 1/2 cup crumbled queso fresco
icon-toma 1 ripe avocado, halved, pitted, and sliced, for garnish

Directions

Step 1
Heat the oil in a large deep skillet or casserole and set over medium-high heat.
Step 2
Add the chorizo and cook for 4 to 5 minutes, until browned and crisped. Remove with a slotted spoon, place in a bowl and set aside. Add the onion, and let it cook and soften for a couple minutes as you stir. Incorporate the pasta along with the garlic and let it all toast and gently fry until pasta darkens its color and smells toasty, 3 to 4 minutes.
Step 3
Reduce heat to medium, incorporate the crushed tomatoes, chipotles in adobo, oregano, salt and pepper and continue cooking for 5 to 6 minutes, stirring as the sauce thickens and darkens.
Step 4
Stir in the broth and continue to cook, uncovered, stirring occasionally to keep the pasta from sticking, until the pasta is soft and the tomato sauce has thickened,10 to 12 minutes. The mixture should be moist.
Step 5
Serve garnished with the crema, queso, chorizo and avocado slices.
