1/4 | cup coarsely chopped white onion | |
1 | pound fideos or vermicelli, angel hair, or spaghettini pasta, broken into smaller pieces | |
10 | garlic cloves, peeled, pressed or finely chopped | |
1 | (28-ounce) can crushed tomatoes | |
1/2 | cup La Costeña Diced Chipotles in Adobo Sauce | |
1 | teaspoon crumbled dried oregano | |
1 1/2 | teaspoons kosher salt, or more to taste | |
1 | teaspoon coarsely ground black pepper | |
3 | cups chicken or vegetable broth | |
1/2 | cup Mexican crema | |
1/2 | cup crumbled queso fresco | |
1 | ripe avocado, halved, pitted, and sliced, for garnish |
Step 1 |
Heat the oil in a large deep skillet or casserole and set over medium-high heat. |
Step 2 |
Add the chorizo and cook for 4 to 5 minutes, until browned and crisped. Remove with a slotted spoon, place in a bowl and set aside. Add the onion, and let it cook and soften for a couple minutes as you stir. Incorporate the pasta along with the garlic and let it all toast and gently fry until pasta darkens its color and smells toasty, 3 to 4 minutes. |

Reduce heat to medium, incorporate the crushed tomatoes, chipotles in adobo, oregano, salt and pepper and continue cooking for 5 to 6 minutes, stirring as the sauce thickens and darkens. |

Stir in the broth and continue to cook, uncovered, stirring occasionally to keep the pasta from sticking, until the pasta is soft and the tomato sauce has thickened,10 to 12 minutes. The mixture should be moist. |

Serve garnished with the crema, queso, chorizo and avocado slices. |
