Huevos Rancheros

• Ingredients

  • 1 jar La Costeña Mexican Salsa
  • Vegetable oil for frying 
  • Corn tortillas
  • Fresh eggs
  • Cotija cheese
  • 2 pouches of La Costeña Black Beans 
  • Cilantro 
  • Lime juice 
  • Mexican hot sauce 

• Directions

  1. In a saucepan on medium heat, add a tablespoon of vegetable oil and the onions. Then add in the black beans and seasoning. *Use a potato to masher to mash up about half of the beans and set aside. ( Or use refried options! )
  2. Add more oil to your saucepan and bring the La Costeña Mexican Salsa to a simmer then remove from heat and set aside or keep it on low heat. 
  3. Fry your tortillas, then fry your eggs sunny side up. 
  4. Assemble by layering the tortillas with black beans, eggs, and salsa. 
  5. Garnish with toppings of your choice.
