How to Make Pozole Verde
Step 1: Cook the Chicken
Place the chicken pieces, chicken breasts, whole head of garlic, onion, and salt in a medium-large pot.
Pour in enough water to completely cover the chicken. Cover and cook over medium heat for 45–55 minutes, or until the chicken is cooked through and tender.
Step 2: Prepare the Broth
As the chicken cooks, use a large spoon to skim off any foam that rises to the surface.
Once the chicken is ready, transfer it to a bowl and cover to keep warm.
Remove and reserve the cooked onion—you'll use it to make the green sauce.
Strain the chicken broth for a cleaner, smoother base before adding it to the pozole.
Step 3: Make the Green Tomatillo Sauce
Here's where that beautiful green color and fresh flavor come to life.
Add the La Costeña Green Tomatillos, reserved cooked onion, cilantro, poblano pepper, serrano if using, oregano, salt, baking soda, and a little warm chicken broth to a blender.

Step 4: Cook the Pozole

Taste and adjust the salt as needed.
