| 2 | cups Extra Virgin Olive Oil, divided | |
| 1 | Cliantro, Garnish |

Preheat the oven to 425 degrees and place the chicken in a large mixing bowl. |

In a food process, push the herbs, garlic and salt. |

Add in the olives and pulse again until coarsely chopped |

Divide the sauce in half. Place half in a bowl with ½ the olive oil, stir, and set aside. |

Pour the remaining olive oil over the chicken, coating well. Add the olive mixture, cover with saran wrap, and marinate for about 30 minutes. |

Place the chicken on an aluminum foil-lined baking sheet or dish and bake for 40 minutes, flipping halfway through. Internal temperature should reach 175 degrees. |
Step 7 |
Serve with sauce and garnish with cilantro. |
