icon-toma 1 Jar La Costeña mole paste
icon-toma   Extra virgin olive oil
icon-toma   Avocado oil  
icon-toma 2 Tbsp minced garlic 
icon-toma 2 Cups pappardelle pasta  
icon-toma 1 Red bell pepper 
icon-toma 1 Orange bell pepper
icon-toma 1 Yellow onion
icon-toma 1 Can corn
icon-toma 1/2 Cup greek yogurt (plus more for garnish) 
icon-toma 2 chicken breasts, sliced and cooked  

Directions

Step 1
First, cook the pasta until al dente and set aside. Be sure to coat the noodles lightly with olive oil to prevent them from sticking. 
Step 2
In a medium saucepan, heat about 2 tablespoons of avocado oil.
Step 3
Add in your onion, salt, pepper, and garlic, and saute for another 2 minutes. 
Step 4
Add in your bell peppers and corn and saute until slightly softened. 
Step 5
Next, add in your mole paste and greek yogurt, coating the veggies thoroughly, adding in a little water as needed.  
Step 6
Allow the sauce to simmer before adding in your pasta and chicken breast. 
Step 7
Toss until everything is evenly coated and heated through. 
Step 8
Serve with a cilantro and greek yogurt.
