Shrimp and Green Salsa Volcanes

• Ingredients

  • 300g shrimp, peeled and deveined (16/20)
  • 1 tbsp butter
  • 3 tbsp white onion, chopped
  • 1 clove garlic, finely chopped
  • 2 tomatoes, diced
  • 1 tbsp cilantro, chopped
  • 200ml La Costeña Green Salsa
  • 6 flour tortillas
  • 200g meltable cheese
  • 3 tbsp arugula, chopped
  • 10 cherry tomatoes, sliced
  • Salt and pepper to taste

• Directions

  1. Clean and cut the shrimp into 2 cm pieces.
  2. In a pan, melt butter and sear the shrimp, seasoning with salt and pepper. Set aside.
  3. In the same pan, sauté the onion, garlic, tomatoes, and cilantro, mixing well.
  4. Add the La Costeña Green Salsa, and stir to combine.
  5. Keep the heat on low, then add the shrimp, mixing well.
  6. Season with salt and pepper.
  7. Meanwhile, toast the flour tortillas on a griddle.
  8. Once toasted, top each tortilla with meltable cheese and allow it to melt.
  9. Slice the cherry tomatoes and chop the arugula.
  10. Once the tortillas are crispy and the cheese is melted, remove them from the griddle.
  11. Top each tortilla with the shrimp and salsa mixture, then garnish with tomatoes and arugula.
