icon-toma 1 - 3.5oz La Costeña Adobo Paste (makes approximately 1 quart of adobo sauce)

icon-toma 2.2 lbs Pork Belly 
icon-toma Salt & Pepper to taste
icon-toma 1 Cup Cooked rice
icon-toma Parsley for garnish

Directions

Step 1

Cut the pork belly into 1-inch by ½-inch cubes. Place them in a pan and
cover with at least 1 quart of water. Lightly season with salt and
simmer until the water evaporates.

Step 2
Once the water evaporates, brown the pork belly in its own fat to your
desired crispness.
Step 3

In a separate pot, bring the other quart of water to a boil and add the
adobo paste. Stir until a smooth sauce forms. If you prefer a thinner
sauce, add more water. Check the seasoning and adjust if necessary.

Step 4

Serve the pork belly adobo over a bed of white rice, garnish with
parsley leaves, and enjoy!
