Festive gingerbread-shaped puff pastry pies filled with a creamy peach filling made with La Costeña canned peaches in syrup—a sweet holiday treat that’s as adorable as it is delicious.
These charming hand pies feel like a holiday memory in the making. Flaky puff pastry puffs up golden in the oven, hugging a luscious peaches-and-cream filling scented with vanilla and cinnamon. Shaped like little gingerbread cookies, they’re perfect for Christmas parties, cookie exchanges, or baking with kids on a cozy December afternoon.
Let’s get cooking.
1 sheet puff pastry, thawed
1 egg, whisked (for egg wash)
1 (15 oz) can La Costeña canned peaches in syrup, drained and finely chopped
1/2 can sweetened condensed milk
1/2 tub whipped topping
1/2 tsp ground cinnamon
1 tsp vanilla extract
In a bowl, combine the chopped La Costeña peaches, sweetened condensed milk, whipped topping, cinnamon, and vanilla. Stir until smooth and creamy. Refrigerate while you prepare the pastry so the filling firms up slightly.
Lightly flour your work surface and roll out the puff pastry just enough to smooth it. Using a gingerbread man cookie cutter, cut out shapes. You’ll need two cutouts per hand pie—one for the bottom and one for the top.
Spoon a small amount of peach filling into the center of half the pastry shapes, leaving a border around the edges. Top with the remaining cutouts and press the edges together. Seal fully by crimping with a fork.
Brush the tops lightly with egg wash to help them bake up beautifully golden.
Place the hand pies on a parchment-lined baking sheet and bake at 400°F for 18–20 minutes, or until puffed and deeply golden brown.
Let the pastries cool for a few minutes before serving—the creamy filling will be hot.
Dust lightly with powdered sugar or drizzle with a simple vanilla glaze for extra sweetness. These pair perfectly with hot chocolate, coffee, or a mug of champurrado during the holidays.
Keep the filling modest—overfilling can cause leaks. A chilled filling and well-sealed edges are the secret to picture-perfect hand pies.
