-Russet potatoes
-Salt
-Pepper
-Olive oil

-Pimenton de la vera
-Flour
-White wine
-Chicken stock or water

Directions
1. Peel and dice the potatoes.
2. Boil in salted water until a fork can go in them without breaking them.
3. Dry the potatoes and bake them at 425°F for 35-45 minutes.
4. For the sauce, cook garlic and onion in olive oil.
5. When transparent, add your chipotles, previously minced, pimenton and flour to make a roux.
6. Add white wine and let the alcohol evaporate
7. Add water or chicken stock and bring to a simmer.
8. Add the tomato puree and bring to a simmer.
9. Blend and bring back to a pan.
10. Let the sauce reduce to the desired consistency.
11. Pour over the potatoes and serve. -
