Ingredients

1 tbsp avocado oil 
2 tbsp minced garlic 
2 2 tbsp minced La Costeña Pickled Sliced Carrots 
 cup water 
¾ cup tricolor quinoa 
1 can of La Costeña Whole Black Beans , drained 
3  cups baby spinach/arugula mix 
½ jar of La Costeña, Nachos Diced Jalapeños
1 tbsp Salt & Pepper to taste
1 tbsp lime juice

 

Directions

1 Heat the avocado oil in a large skillet on medium-high heat.
2 Add in the minced garlic and jalapeño and cook until fragrant 
3 Add in the water, quinoa, and salt 
4 Bring to boil, reduce to simmer, and cook until tender, about 15 minutes 
5 Remove the skillet from the heat and allow to rest covered for 10 minutes 
6 Stir in the baby spinach, arugula, black beans, and pickled jalapeños, garnish with fresh lime 
juice 
7 Serve immediately
