icon-toma 2 Tbsp neutral oil 
icon-toma 4-5 Tbsp green curry paste
icon-toma 1 Large white onion
icon-toma 2 Tbsp minced garlic
icon-toma 2 Tbsp minced ginger
icon-toma 4-5 Stalks lemongrass
icon-toma 2-3 Lbs boneless chicken thighs
icon-toma 1 Can coconut milk 
icon-toma 1 jar La Costeña mole paste
icon-toma 1 Tbsp fish sauce
icon-toma 1/2 Tbsp sugar
icon-toma   Juice from 1 lime
icon-toma 5-6 Kefir lime leaves
icon-toma 1 Bunch Thai basil 

Directions

Step 1
In a large sauce pan add in your neutral oil on medium heat.
Step 2
Add in the green curry paste and heat through.
Step 3
Then add the white onion, garlic, ginger, lemongrass, and chicken thighs.
Step 4
Stir until the chicken is coated in the spice mixture.
Step 5
Add in the coconut milk, mole paste, fish sauce, sugar, lime juice, and herbs
Step 6
Combine thoroughly and allow to simmer thoroughly on medium to medium-high until chicken is cooked through.
Step 7
Serve over jasmine rice.
