Ingredients

icon-toma 2 boneless chicken breasts  
icon-toma 1/4 white onion  
icon-toma 1 garlic clove  
icon-toma 5 bay leaves  
icon-toma 2 tbsp white sesame seeds, toasted  
icon-toma La Costeña Mole Paste  
icon-toma La Costeña Whole Black Beans  
icon-toma Corn tortillas  

 

Directions

Step 1

Boil the chicken breasts with onion, garlic, and bay leaves. Shred the cooked chicken and reserve the broth.  

Step 2
In a pan, dissolve La Costeña Mole Paste with the reserved broth, stirring to achieve a smooth consistency.  
Step 3

Warm tortillas and fill with shredded chicken. Roll to form enchiladas and place on a serving plate.  

Step 4

Pour mole sauce over the enchiladas and garnish with toasted sesame seeds.  

Step 5

Serve with a side of warmed La Costeña Whole Black Beans.
