• Ingredients

  •  2 boneless chicken breasts
  • 4 corn tortillas
  • Vegetable oil
  • 1/4 red onion, thinly sliced
  • 1/4 cup crema (Mexican cream)
  • La Costeña Salsa Verde
  • Fresh cilantro
  • Salt and whole black pepper to taste

• Instructions

  1. Boil chicken breasts with salt and black pepper until cooked. Shred the chicken and set aside.

  2. Heat tortillas in a skillet with a little oil until soft. Fill each tortilla with shredded chicken, roll, and place in the skillet to crisp slightly.

  3. Pour La Costeña Salsa Verde over the enchiladas, sprinkle with cheese, and cover to melt.

  4. Serve with crema, red onion, and fresh cilantro as garnish.
