Step 1: Make the Filling
In a bowl, combine the chopped La Costeña peaches, sweetened condensed milk, whipped topping, cinnamon, and vanilla. Stir until smooth and creamy. Refrigerate while you prepare the pastry so the filling firms up slightly.
Step 2: Cut the Gingerbread Shapes
Lightly flour your work surface and roll out the puff pastry just enough to smooth it. Using a gingerbread man cookie cutter, cut out shapes. You’ll need two cutouts per hand pie—one for the bottom and one for the top.
