icon-toma 2 tablespoons vegetable oil
icon-toma 1 cup slivered white onion
icon-toma 2 garlic cloves, peeled and finely chopped
icon-toma 4 Dried guajillo chiles, stemmed, seeded and diced
icon-toma  1  jar La Costeña Nopales
icon-toma 1/2 teaspoon kosher or coarse sea salt, or to taste
icon-toma 1 cup fresh corn kernels
icon-toma 1 Bottle La Costeña Salsa Verde
icon-toma 4 Ounces grated panlea cheese
icon-toma 16 Corn Tortillas

 

Directions

Step 1
Heat oil in a large heavy skillet over medium-high heat
Step 2
Add the onion and cook for 3 to 4 minutes, until softened.
Step 3
Add the garlic, cook for less than a minute, until fragrant.
Step 4
Add the guajillo chiles, stir, cook for a minute and add the nopales, sprinkle the salt, stir and cook for about 3 to 4 minutes. 
Step 5
Pour the salsa verde, mix, and cook for 3 to 4 minutes, until thickened and seasoned.
Step 6 
Taste for salt and add more if needed. Set aside. 
Steo 7
On a preheated comal set over medium low heat, heat the tortillas on both sides for a minute. Add about 1/4 cup of the nopalito mixture, top with grated panela cheese and eat!
