Ingredients
- 1 jar La Costeña Mexican Salsa
- Vegetable oil for frying
- Corn tortillas
- Fresh eggs
- Cotija cheese
- 2 pouches of La Costeña Black Beans
- Cilantro
- Lime juice
- Mexican hot sauce

Directions
- In a saucepan on medium heat, add a tablespoon of vegetable oil and the onions. Then add in the black beans and seasoning. *Use a potato to masher to mash up about half of the beans and set aside. ( Or use refried options! )
- Add more oil to your saucepan and bring the La Costeña Mexican Salsa to a simmer then remove from heat and set aside or keep it on low heat.
- Fry your tortillas, then fry your eggs sunny side up.
- Assemble by layering the tortillas with black beans, eggs, and salsa.
- Garnish with toppings of your choice.
