2 | Tbsp minced garlic | |
2 | Cups pappardelle pasta | |
1 | Red bell pepper | |
1 | Orange bell pepper | |
1 | Yellow onion | |
1 | Can corn | |
1/2 | Cup greek yogurt (plus more for garnish) | |
2 | chicken breasts, sliced and cooked |
Step 1 |
First, cook the pasta until al dente and set aside. Be sure to coat the noodles lightly with olive oil to prevent them from sticking. |

In a medium saucepan, heat about 2 tablespoons of avocado oil. |

Add in your onion, salt, pepper, and garlic, and saute for another 2 minutes. |

Add in your bell peppers and corn and saute until slightly softened. |

Next, add in your mole paste and greek yogurt, coating the veggies thoroughly, adding in a little water as needed. |

Allow the sauce to simmer before adding in your pasta and chicken breast. |

Toss until everything is evenly coated and heated through. |

Serve with a cilantro and greek yogurt. |
