1 | Tbsp cooking oil |

1 lb | Ground beef |

1/2 | Onion, chopped |

1/2 | Carrot, finely diced |

2 | Garlic cloves, minced |

15 oz | Tomato purée |

3/4 | Cups of water of stock |

1 | Tsp brown sugar |

1 | Cup grated cheese |

Salt and pepper to taste |
Step 1 |
Melt the butter and cooking oil in a frying pan over medium heat. Drain the hominy and incorporate it. Cook while stirring often until slightly roasted on all sides. Set aside. |
Step 2 |
In a large saucepan or Dutch oven, add a splash of cooking oil and sauté the onion, carrot and garlic. Once fragrant, incorporate the ground beef and the beans. Cook while stirring until the meat has browned. |
Step 3 |
Add the tomato pure and water. Add the brown sugar and bring to a boil. |
Step 4 |
Preheat the oven to 350°F (176°C) |
Step 5 |
Combine the beef mixture and the roasted hominy and pour into a baking tray. Cover with grated cheese and bake for 10-15 minutes until the cheese is bubbly. |
Step 6 |
Serve with a side of tortilla chips. |
