||Melt the butter and cooking oil in a frying pan over medium heat. Drain the hominy and incorporate it. Cook while stirring often until slightly roasted on all sides. Set aside.
||In a large saucepan or Dutch oven, add a splash of cooking oil and sauté the onion, carrot and garlic. Once fragrant, incorporate the ground beef and the beans. Cook while stirring until the meat has browned.
||Add the tomato pure and water. Add the brown sugar and bring to a boil.
||Preheat the oven to 350°F (176°C)
||Combine the beef mixture and the roasted hominy and pour into a baking tray. Cover with grated cheese and bake for 10-15 minutes until the cheese is bubbly.
||Serve with a side of tortilla chips.
