1. Green Pozole

Start off the festivities with a savory bowl of Green Pozole. This comforting dish comes together with only 10 ingredients. Add tomatillos and whole jalapeños to a blender, along with cilantro, white onion, garlic, and oregano. Blend until you get a thick sauce, adding water as needed.

Drain the hominy and pour it into a pot with the green sauce. Add chicken stock and salt to taste. Cook until heated through. And that's it! You're ready to eat. Top with shredded chicken and any of your madre's favorite garnishes: avocado, shredded lettuce, radishes, sour cream, a lime wedge, or even tortilla chips!

2. Cheesy Enchiladas

If you're cooking brunch for Día de las Madres, consider making Cheesy Enchiladas. Begin by warming your tortillas on a large skillet or comal. Then, pour 1 cup of La Costeña Green Salsa into a 9x13 baking dish. Fill each tortilla with shredded chicken, roll them up, and place them seam-side down in the dish.

Pour the remaining salsa on the enchiladas, sprinkle with a generous amount of Oaxaca, asadero, cheddar, and Cotija cheese, and bake for 15 to 20 minutes in a 400-degree oven. Your enchiladas are done when the cheese begins to brown slightly. Add avocado, Mexican crema, or sliced scallions, and dig in!

3. Habanero Pineapple Jam

If you're feeling ambitious, gift your madre a jar of homemade habanero pineapple jam. You'll need only seven ingredients: a yellow bell pepper, 3-4 La Costeña habanero peppers, pineapple juice, white vinegar, no-sugar pectin, salt, and granulated sugar. Blend the peppers, boil all ingredients in a saucepan, stir in sugar, and cook until the jam is reduced to around 1.5 cups. Once cool, she can eat the jam with crackers, homemade bread, or in a dessert, like a simple olive oil cake, to round out the celebration. This spicy treat is sure to bring a smile to your madre's face.
