Spicy Olive Chicken Drumsticks

  1. Preheat the oven to 425 degrees and place the chicken in a large mixing bowl.
  2. In a food process, push the herbs, garlic and salt. 
  3. Add in the olives and pulse again until coarsely chopped
  4. Divide the sauce in half. Place half in a bowl with ½ the olive oil, stir, and set aside.
  5. Pour the remaining olive oil over the chicken, coating well. Add the olive mixture, cover with saran wrap, and marinate for about 30 minutes. 
  6. Place the chicken on an aluminum foil-lined baking sheet or dish and bake for 40 minutes, flipping halfway through. Internal temperature should reach 175 degrees.
  7. Serve with sauce and garnish with cilantro.

  • 8-10 chicken drumsticks (skin on)
  • 1 large bunch parsley
  • 5 tbsp fresh basil 
  • 5 sprigs fresh mint 
  • 5 garlic cloves 
  • Pinch Kosher salt
  • 1 can La Costeña Jalapeño Stuffed Olives 
  • 2 cups Extra Virgin Olive Oil, divided
  • Cilantro, garnish
