- Preheat the oven to 425 degrees and place the chicken in a large mixing bowl.
- In a food process, push the herbs, garlic and salt.
- Add in the olives and pulse again until coarsely chopped
- Divide the sauce in half. Place half in a bowl with ½ the olive oil, stir, and set aside.
- Pour the remaining olive oil over the chicken, coating well. Add the olive mixture, cover with saran wrap, and marinate for about 30 minutes.
- Place the chicken on an aluminum foil-lined baking sheet or dish and bake for 40 minutes, flipping halfway through. Internal temperature should reach 175 degrees.
- Serve with sauce and garnish with cilantro.
