Jalapeno Lime Quinoa

1. Heat the avocado oil in a large skillet on medium-high heat. 
2. Add in the minced garlic and jalapeño and cook until fragrant 
3. Add in the water, quinoa, and salt 
4. Bring to boil, reduce to simmer, and cook until tender, about 15 minutes 
5. Remove the skillet from the heat and allow to rest covered for 10 minutes 
6. Stir in the baby spinach, arugula, black beans, and pickled jalapeños, garnish with fresh lime 
juice 
7. Serve immediately

Ingredients

  • 1 tbsp avocado oil 
  • 2 tbsp minced garlic 
  • 2 tbsp minced jalapeño 
  • 1 1/4 cup water 
  • 3/4 cup tricolor quinoa 
  • 1 can black beans, rinsed 
  • 1/2 jar pickled nachos jalapeños 
  • 2-3 cups baby spinach/arugula mix 
  • Salt 
  • Pepper 
  • Lime juice
