Directions
Step 1 | Blend the tomatoes, onion and chipotle peppers. Season with salt and pepper and set aside. |
Step 2 | Add the butter to a large frying pan over a low flame. Sauté the minced garlic and immediately add the shrimp. Cook on both sides until cooked halfway through (3-5 minutes.) |
Step 3 | Scoop the shrimp aside. |
Step 4 | Add the tomato sauce to the same pan and bring to a boil. |
Step 5 | Incorporate the shrimp with the sauce and simmer for 5 minutes or until cooked. |
Step 6 | Serve and garnish with chopped cilantro. |
