- Butterfly and devein the shrimp. Using a sharp knife, cut each shrimp lengthwise along the back.
- In a bowl, add the shrimp, 2 cups of lime juice, and 1 tbsp of salt. Marinate in the refrigerator for about 15-20 minutes until the shrimp turns opaque.
- In a separate bowl, mix together 1 tbsp of salt, 1 tbsp of pepper, diced cucumber, red onion, and the LA COSTEÑA RED PICKLED SLICED JALAPEÑO PEPPER.
- For the sauce, blend the serrano chiles, cilantro, ¼ onion, and 1 cup of lime juice until smooth.
- Pour the blended sauce over the shrimp mixture and toss to combine.
- Serve the Aguachiles on tostadas or with tortilla chips. Enjoy immediately for the freshest flavor!
