Directions

Step 1 Cook the bacon in a frying pan until halfway cooked (3-4 minutes). Set aside.
Step 2 Coat the pork ribs with all-purpose flour and sear on all sides. Set aside.
Step 3 Add the black beans, beef broth, onion, garlic and bay leaf to a pot. Bring to a boil.
Step 4 Add the pork ribs and the bacon. Simmer for 10-15 minutes over a medium flame.
Step 5 Remove the bay leaf and serve.

Notes:

  • Alternatively, use Pinto beans instead of black beans. 
  • Serve with a side of white rice for a complete meal.

  • 4 bacon strips
  • 5 lb. bone-in pork ribs
  • 1/4 cup all-purpose flour
  • 2 cans of whole black beans La Costeña
  • 4 cups beef broth
  • 1/2 yellow onion, coarsely chopped
  • 2 garlic cloves, minced
  • 1 bay leaf
  • Salt and pepper to taste
