Directions
Step 1 | Cook the chorizo on a frying pan until fully cooked and crumbly. Use a wooden spoon to break the chorizo apart into small pieces. |
Step 2 | Sauté the onion in the same pan until translucent and add the chipotle, beans and chorizo. Mix well. Carefully add a splash of water if too dry. |
Step 3 | Transfer the beans to a small baking tray and cover them with the grated cheese. |
Step 4 | Preheat the oven to 300°F (150°C) and grate for 5-8 minutes until the cheese is bubbly. |
Step 5 | Garnish with fresh cilantro and serve with tortilla chips. |
