Chicken Mole Pasta

Step 1: First, cook the pasta until al dente and set aside. Be sure to coat the noodles lightly with olive oil to prevent them from sticking.  

Step 2: In a medium saucepan, heat about 2 tablespoons of avocado oil. 

Step 3: Add in your onion, salt, pepper, and garlic, and saute for another 2 minutes. 

Step 4: Add in your bell peppers and corn and saute until slightly softened. 

Step 5: Next, add in your mole paste and greek yogurt, coating the veggies thoroughly, adding in a little water as needed.  

Step 6: Allow the sauce to simmer before adding in your pasta and chicken breast. 

Step 7: Toss until everything is evenly coated and heated through. 

Step 8: Serve with a cilantro and greek yogurt.  

Ingredients

1 jar of La Costeña mole paste 

Extra virgin olive oil 

Avocado oil  

2 tbsp minced garlic 

2 cups pappardelle pasta  

1 red bell pepper 

1 orange bell pepper 

1 yellow onion 

1 can corn 

½ cup greek yogurt (plus more for garnish) 

2 chicken breasts, sliced and cooked
