Diabla Shrimp with Chipotle

 Ingredients 

  • 4 plum tomatoes 
  • 1/4 white onion 
  • 3 oz (half a small can) of La Costeña Chipotle Peppers  
  • Salt and pepper to taste 
  • 4 tbsp butter 
  • 2 lbs. Medium-sized shrimp, peeled.  
  • 2 garlic cloves, minced 
  • 1/4 cup chopped cilantro 





Blend the tomatoes, onion and chipotle peppers. Season with salt and pepper and set aside.
Add the butter to a large frying pan over a low flame. Sauté the minced garlic and immediately add the shrimp. Cook on both sides until cooked halfway through (3-5 minutes.)
Scoop the shrimp aside.
Add the tomato sauce to the same pan and bring to a boil.
Incorporate the shrimp with the sauce and simmer for 5 minutes or until cooked.
 Serve and garnish with chopped cilantro.
