Recipe Ingredients

  • icon-toma1 cup uncooked lentils
  • icon-toma1 large English cucumber, chopped
  • icon-toma1 cup cherry or grape tomatoes, halved
  • icon-toma1/2 cup radishes, diced
  • icon-toma2/3 cup red onion finely chopped
  • icon-tomacan La Costeña Serrano peppers, drained and chopped
  • icon-toma2/3 cup feta cheese crumbles
  • icon-toma1/2 cup fresh parsley, chopped

Dressing 

  • icon-toma2 Tablespoons olive oil
  • icon-toma1/2 a Lemon's juice 
  • icon-toma1 Tablespoon honey
  • icon-toma1 Pinch of salt 
  • icon-toma1 Pinch of black pepper

Step 1

Cook the lentils according to the package instructions. Once the lentils are cooked, drain them into a fine mesh strainer and run cold running water over them. Set them aside to cool.

Step 2

Mix the dressing ingredients together and set aside until your are ready to use.

Step 3

Combine all salad ingredients into a large bowl.

Step 4

Add in the dressing and toss until well-combined.

Step 5

Serve as a side or main entrée and enjoy!
