Enchiladas Rojas con Jamon (Red Enchiladas with Ham ©)

INGREDIENTS:

  • 12 slices ham
  • 12 lightly fried tortillas
  • 1 sliced onion
  • 2 mince garlic cloves
  • 1 can La Costeña home-style Mexican Sauce
  • 2 cups  tomato puree
  • ½ liter (2 cups) cream
  • 1 cup manchego cheese shredded

HOW TO:

Place a slice of ham in each tortilla and roll into tacos. Arrange them in a greased ovenproof dish. Saute onion and garlic, add Mexican sauce and tomato puree. Season with salt. Remove from heat and stir in cream. Cover enchiladas with this sauce and sprinkle with cheese. Bake in a preheated 180 C (355F) oven until cheese melts.
