Quinoa Huaraches

Ingredients (4 people/servings):

  • Quinoa 250 g
  • Amaranth 30 g
  • Flaxseed 10 g
  • 100g spreadable cottage cheese
  • Diced peppers (different colors) and “La Costeña” red peppers

Directions:

  1. Preheat oven to 180º. Boil 1 cup of water in a pot.
  2. Add the quinoa and let it absorb the water.
  3. Remove and add the amaranth and the flaxseed.
  4. Shape the huaraches and bake at 180º for 15 minutes.

Note: Huarache is a popular Mexican dish and it has an oblong shape.
