These Quesadillas Potosinas ©  come from the central Mexican state of San Luis Potosi. They are easy to make and delicious! Enjoy the flavors of Mexico with this dish.


  • 3 grilled seeded chiles anchos
  • 1 k (2lbs) tortilla dough
  • 1 tbsp of salt
  • 1 ½ k (1 lb) sliced Oaxaca cheese
  • 3 avocados
  • La Costeña homestyle Mexican sauce


Soak the chiles in hot water, then drain-and mill in blender with scarcely and water. Mix the dough with the ground chile adding 1 tbsp. salt and 3 tbsp. of four. Let stand 10 minutes. Pat dough into tortillas and fill with the cheese, fold them over in the form of quesadillas sealing edges and fry in very hot oil until they are golden brown. Serve with slices of avocado and home-style Mexican sauces.
