Huevos a La Mexicana (Eggs – Mexican Style) is named after the mixture of ingredients Green Serrano Peppers, White Onion and Red Tomato, which depict the tricolored Mexican Flag. This recipe is so delicious and simple to make. Don’t forget the tortillas!
- 4 eggs
- 1 tomato
- 1 can of La Costeña Serrano Peppers, use 3 to 4 peppers (to your liking)
- 1/4 onion
- 1 tablespoon of olive oil
- 1/4 teaspoon of salt
- 1 can of La Costena Homestyle Sauce
Whisk the eggs in a bowl with a fork, until are thoroughly mixed; and place aside. Place half 1 tablespoon of olive oil in a frying pan over medium heat add the diced onion and fry for approximately 1 minute, until them seem a little transparent; stirring recurrently. Incorporate in the frying pan: the Chile Serrano the Costeña, 1 can of La Costeña Homestyle sauce and the tomato chopped into squares. Mix the ingredients in the skillet and fry them by 1 minute approximately, until the chile and the tomato are slightly fried; stirring frequently.
