Give your meatballs a kick, with this Chipotle Meatballs © recipe. It is the perfect quick recipe for a busy family. They are sure to please everyone, from kids to adults.


  • 3 tbsp. minced white onion
  • 2 tbsp. oil
  • 1 minced clover garlic
  • 1 cup Tomato Sauce Seasoned with Spices
  • 1 cup Tomato Sauce
  • 1 cup chicken broth
  • 2 tbsp. La Costeña ® Chipotle Peppers in Adobo Sauce
  • 12.5 oz. ground beef
  • 2 tbsp. minced onion
  • 1/2 minced clover garlic
  • 3 tbsp. chopped coriander
  • 3 tbsp. bread crumbs
  • 1/4 ground cumin
  • Salt and pepper
  • 2 hard-boiled eggs (peeled)


1. Stir fry the onion in oil, add the garlic and cook for 3 mins. Add the tomato sauce, tomatoes, broth and La Costeña® Chipotle peppers. Cook over low heat for 5 min.

2. Mix the beef with the onion, garlic, coriander, bread crumbs, cumin, salt and pepper.

3. Cut the eggs into 4 portions. Split the beef mixture in 8 portions and give each a round shape. Stuff with a portion of the egg. Slide into the sauce, cook for 15 min. or until completely
