Chicken nuggets with quinoa ©

Ingredients:

  • 2 cups water
  • 1 cup quinoa
  • 1 tbsp. oregano
  • 2 chicken breasts
  • 2 cups flour
  • 3 eggs

Serve with: chipotle chili ”La Costeña” sauce (blend the canned chilies)

  • Salt and pepper
  • For brushing:
  • Olive oil with minced garlic

Directions:

  1. Cook the quinoa, on low heat for 20 min and let it rest 5 min, season with oregano and mix.
  2. Preheat the oven to 200 ° C, season the chicken with salt, pepper and coat with flour, whisked egg and then quinoa and place it on a tray, brush with the garlic olive oil.
  3. Bake for 15 to 20 min and serve with ”La Costeña” ketchup or chipotle chili sauce.
