Chicken nuggets with quinoa ©
Serving for 1 person
- 2 cups water
- 1 cup quinoa
- 1 tbsp. oregano
- 2 chicken breasts
- 2 cups flour
- 3 eggs
Serve with: chipotle chili ”La Costeña” sauce (blend the canned chilies)
- Salt and pepper
- For brushing:
- Olive oil with minced garlic
- Cook the quinoa, on low heat for 20 min and let it rest 5 min, season with oregano and mix.
- Preheat the oven to 200 ° C, season the chicken with salt, pepper and coat with flour, whisked egg and then quinoa and place it on a tray, brush with the garlic olive oil.
- Bake for 15 to 20 min and serve with ”La Costeña” ketchup or chipotle chili sauce.
