Ingredients

  • 4 lb (2 kilos) Beef fajita (cut into small rectangles)
  • 1 lb (1/2 kilo) Bacon (diced)
  • 1 ½ Onions
  • 1 or 2 Large cloves of garlic
  • 1 4 oz (105g) Can of La Costeña Green Pickled Serrano Peppers
  • Water
  • Salt and pepper to taste

Serve with:

  • Chopped onion (to taste)
  • La Costeña Green Pickled Serrano Peppers (to taste)
  • Chopped cilantro (to taste)
  • 2 20 oz (560g) Cans of La Costeña Whole Pinto Beans
  • Toasted tortillas

How to

Fry the bacon, add the meat and continue frying until dry. Blend the Serrano peppers (including the stalks) with the onion, garlic and a little water. Add the mixture to the meat and boil for one minute and add water to cover, pepper, stock and salt to taste. Cover and simmer making sure it’s juicy. Serve in a bowl with the onion, Serrano peppers, cilantro and hot Pinto Beans (from which some of the liquid has been removed).
