You can never go wrong with La Costeña refried black beans! Bean Gorditas (Gorditas de Frijol) is the perfect finger foods that can be prepped ahead of time and popped in the oven when you’re ready!
- 1/4 K (1/2 lb.) tortilla dough
- 4 Tbsp. lard
- 1 chopped onion
- 1 can La Costeña refried black beans
- La Costeña taquera sauce
Mix dough with 2 Tbsp. lard and 1/2 tsp. salt. Let stand 10 minutes. Sauté onion with the remaining lard, add beans and cook, stirring until the liquid is reduced. Take portions of the dough and pat them into thick tortillas. Make a hollow in the center and fill with 1 Tbsp. Of the bean mixture, cover with the same dough and flatten into round patties. Fry in hot oil on both sides. Heat taco sauce and pour over the gorditas. Take portions of the dough and pat them into thick tortillas.
