Bean Cake With Chipotle and Cheese

Ingredients:

  • 8 slices of sandwich bread
  • 1 can La Costeña Refried Black Beans
  • 1 cup cooked spinach
  • ½ small onion, finely chopped
  • ½ lb shredded mozzarella
  • 1 can La Costeña Chipotle Sauce
  • ½ cup sour cream
  • ½ lb Queso Fresco
  • ½ cup grated cheddar cheese
  • 2 tsp vegetable oil

Directions:

  • Preheat the oven 400F
  • Cut the edges of the bread
  • In a sauce pan, heat the oil and add onion, sauté until translucent
  • Add spinach and simmer for 3 minutes
  • Arrange the pieces of bread in a square mold
  • Spread La Costeña Refried Black Beans on each piece of bread
  • Spread La Costeña Chipotles
  • Add Sliced Queso Fresco
  • Put another layer of bread
  • Spread the spinach/onion mix
  • Sprinkle with Mozzarella cheese
  • Cover with a layer of bread
  • Spread cream on top of the bread
  • Sprinkle with Cheddar cheese
  • Put the cake in the oven in the highest rack for 15-20 minutes
  • Serve warm with tomato and avocado salad
