The Arroz  a la Mexicana is a truly delicious dish! If you belong to the “I can never make good rice” club, try these recipes with pre-cooked rice, that is virtually fool proof. The quality of rice produced in Mexico is very good, and the varieties of recipes, like rice with tomatoes  and  vegetables, or white rice, mixed with  green peas or carrots are easily turned into a variety of rice dishes… just add a dash of mole or top the rice with a fried egg, or diced  avocado, or with La  Costeña’s  Mexican or Salsa Verde; the white rice combined with black beans is the  famous “Moros y Cristianos.” There’s really no good reason why so many people should stick to the same old recipe!
