The Arroz  a la Mexicana is a truly delicious dish! If you belong to the “I can never make good rice” club, try these recipes with pre-cooked rice, that is virtually fool proof. The quality of rice produced in Mexico is very good, and the varieties of recipes, like rice with tomatoes  and  vegetables, or white rice, mixed with  green peas or carrots are easily turned into a variety of rice dishes… just add a dash of mole or top the rice with a fried egg, or diced  avocado, or with La  Costeña’s  Mexican or Salsa Verde; the white rice combined with black beans is the  famous “Moros y Cristianos.” There’s really no good reason why so many people should stick to the same old recipe! For starters, try this Arroz a la Mexicana recipe, you won’t be disappointed.

Arroz a la Mexicana Ingredients:

  • 2 cups pre-cooked rice 
  • 2 sliced chorizos
  • 1/2 chopped onion
  • 2 cloves of garlic, minced
  • cup of La Costeña tomato puree
  • 1 sprig of parsley
  • 1 1/2 cup chicken broth
  • 1 cup of La Costeña chicaros
  • 2 sliced avacados
  • 2 boiled eggs, sliced
  • 6 La Costeña chiles serranos

How To:

Rinse and drain the rice. Fry rice until transparent, add sausages and fry until cooked, drain excess oil; Saute onion and garlic; Add the puree. When puree boils, add 1 cup of cold water and add parsley; cover the pan, reduce heat and simmer until rice is fluffy. A minute before serving add the drained chicharos.

This can be served with Mexican rice, white rice, or vegetables! It can also be mixed with some black beans to make the famous “Moros y Cristianos”; or top the rice with chopped avocado, egg, or La Costeña’s salsa verde.
